Courgette and Parmesan Cake

Recipe for Savoury Cake : Courgette and Parmesan Cake.

Let’s have cake for dinner!
It’s savoury and filled with veggies but it’s still cake.

This recipe is originally from Les Gourmandises d’Isa.
I made a few little changes though to account for personal preference (for example I switched out the pesto from the original recipe for fresh, chopped herbs)


200g flour

250g courgettes

1 sachet baking powder

3 eggs

100g grated cheese

100g parmesan

50ml olive oil

50ml vegetable oil

100ml milk

20g butter

1 handful chopped basil

1 handful chopped mint

1 pinch of salt


Wash and grate the courgettes.
Melt the butter in a pan and add the courgettes until no more moisture comes from them.
Preheat the oven to 180degrees.
Mix the baking powder and flour.
In another bowl whisk the eggs, oils and milk.
Add salt and pepper before slowly incorporating the flour.
Next add the cheeses, herbs and courgettes and mix well.
Butter a baking tin (rectangular shape is best) and pour in the mixture.
Cook for 50minutes.
Check the cake is baked by sticking a knife into the cake, if it pulls out clean it is cooked.
Leave the cake to cool before taking out of the mould and serving.
