I used to look after a child who absolutely loved to be in the kitchen and prepare apero for everyone.

Homemade Blini & Guacamole are crowd pleasers for sure!
It’s something they can make with minimal supervision (just when cooking with the hot pan)
10g levure de boulanger (yeast)
200ml room temperature milk
Pinch of salt
Separate the egg whites and mix the yolks with the flour.
Add the milk and levure.
Cover the bowl with a wet tea towel and leave to stand for 1 hour.
Beat the egg whites into peaks and delicately incorporate to the dough.
Season the mixture with the salt and sugar.
In a nonstick pan, put a small amount of the mixture to form mini pancake shapes.
Let cook slowly for 1 minute.
Flip the blinis and cook the other side.
There are so many different ways to make Guacamole out there, it’s pretty much smashed avocado with various bits added in to give it a kick.
This is my preferred method of making it but play around with ingredients!
Guacamole pairs perfectly with blinis, nachos or even just on toast!
2 spring onions
Pinch of salt
Peel and finely chop the onion.
Chop the tomato too.
(It goes without saying that knives are sharp so keep an eye on the kiddos for this step)
Press and zest the lemon.
Peel the avocado and in a bowl mash it with a fork.
Add the lemon juice and salt.
Add the rest of the ingredients and mix.
Keep the guacomole fresh by keeping the avocado seed in the mixture until ready to eat.
Finally, serve the blini & guacamole together!
