Get the kids involved in the kitchen with this simple, yet delicious dish.
Ratatouille is great for dinner. Packed full of veg and nutrients, it is Mediterranean goodness.
Eat with rice, cous cous, baked potato, chicken, eggs..actually ratatouille is really versatile and can be eaten with pretty much anything.
- 2 courgettes cut thinly
- 1 aubergine cut into cubes
- 1 red pepper
- 1 yellow pepper
- 1 green pepper
- 60ml olive oil
- 1 onion
- 2 garlic cloves minced
- 6 tomatoes peeled and cut into 4 (I like to add some cherry tomatoes in there too)
- ¼ cup basil
Salt the courgette and aubergine and set aside.
Cut the peppers into pieces of around 3cm.
Rinse the courgette and aubergine with cold water and dry them with some kitchen roll.
Heat 1 tbsp of oil in a pan and add the garlic and onion until the onion is cooked.
Remove the onion and garlic and set aside.
Add half the oil and add the courgette and aubergines until they have softened.
Add the rest of the oil and peppers.
Once cooked, re add the onion, garlic and tomatoes.
Cook for 15 minutes on a medium / low heat, stirring now and again.
