Banana Pancakes

This banana pancakes recipe is absolutely delicious.

I am a big believer of breakfast food being good at all times of day and banana pancakes are a great example of this.

Pancakes for dessert – because dinner is not complete without a sweet treat

This recipe from Dels Cooking Twist creates light and airy banana pancakes (as long as you be careful not to overmix!)
It is made from staple kitchen cupboard ingredients … nothing fancy here!
Easy enough for the kids to get involved and make too!


  • 180g of flour
  • 25g of sugar (optional)
  • 2 and 1/2 teaspoons of baking powder
  • 1 pinch cinnamon (optional but extra yummy!)
  • 1 pinch salt
  • 2 medium ripe bananas
  • 240 ml milk
  • 2 eggs
  • 60 ml canola oil (you can substitute this for any vegetable oil you have)


1 – Whisk together the flour, sugar (if using), baking powder, cinnamon and salt. Pop it to one side.
2 – Mash the bananas using a fork. Add the eggs, milk and oil. Give it a good mix.
3 – Gently mix the dry and wet ingredients together until combined. Don’t go nuts! If you over mix the pancakes will be chewy.
4 – Heat a large frying pan. Spoon some pancake mix onto the pan. Cook until bubbles start to form on the surface of the pancake. FLIP! Cook for one or two more minutes.
5 – Serve warm with toppings of your choice. I personally like to add agave syrup and some berries but you can top them with anything you like!
