Mac & Cheese

Mac & cheese is a crowd favourite.
It’s warm, hearty, filling and delicious. Perfect for these cold winter nights!

Mac & cheese is also perfect for disguising some veggies for the fussy little ones who just don’t want to eat their greens!

Below is a recipe for mac & cheese with hidden cauliflower from BBC Good Food.
The colours and textures of the ingredients are all pretty similar but the flavours complement eachother really nicely and it is sure the kids will be asking for seconds!

This recipe serves 4

You will need 
– 1 cauliflower
– 250g macaroni
– 25g butter
– 2tbsp flour
– 2tsp mustard a l’ancienne
– 450ml milk
– 100g cheddar grated (you can use other cheese if you prefer, or a mix of different cheeses…experiment!)

What to do
Cut the cauliflower. The smaller you cut it the less the children will notice it when they take a spoonfull.
Cook the macaroni in boiling, salted water.
4 minutes before the pasta is cooked add the cauliflower to the pot.
In a pan, melt the butter then add the flour and mustard.
Mix continuously and slowly add in the milk.
Then, add ¾ of the cheese and mix until combined and melted.
Drain the cauliflower and pasta and incorporate into the sauce.
Pour the whole mixture into an oven proof dish, sprinkle the rest of the cheddar on top and grill on the highest heat until the top is golden and crispy.

This really is a super quick and simple recipe that the whole family will appreciate.

It also makes a great base dish and you can add other ingredients to suit your tastes.
