80g wilted baby spinach
30g grated cheese of your choice
Optional dash of Lea & Perrins sauce
Toast your bread.
Top the toast with the spinach.
Add your grated cheese (and Lea & Perrins if using)
Put it under the grill until golden and bubbling
In the meantime, bring a pan of water to the boil.
Boil your eggs 5 minutes if they are room temperature, 6 minutes if they are kept in the fridge.
