It’s Monday morning, the sun is out, we are allowed outside again.
Could it get any better?
Madeleines make even a great day even better!

This recipe from Urban Bliss Life makes about 20!
There are a lot of different madeleine recipes out there.
They all have the same basic ingredients but in different quantities. I just personally like this one.

Play around with it – add some honey, cinnamon, chocolate chips or cocoa powder.
Why not instead of sprinkles, dip your madeleines in chopped nuts or dried berries.

– 100g melted butter
– 2 eggs
– 100g sugar
– 120g flour
– ¼ teaspoon baking powder
– lemon zest
– 100g chocolate
– sprinkles

Preheat the oven to 190degrees.
Mix the eggs, lemon zest and sugar until smooth.
Add the flour and baking powder, continue mixing.
Add the butter and mix until smooth.
Pour the mixture into a greased madeleine mould.
Bake for 8-13 minutes (until golden around the edges and springy to the touch)
Melt the chocolate in the microwave.
Dip the madeleines into the chocolate then into the sprinkles.
Leave to set.
