This Mozzarella Baked Aubergines recipe is one I have been making for ages, so I don’t remember where it originally came from (sorry!)

2 aubergines cut in half lengthways
1 tin crushed tomatoes (250g)
1tbsp tomato concentrate paste
300g sliced mozzarella
Basil for decoration
Parmesan for sprinkling
Preheat the oven to 200degrees.
Oil the aubergines and bake for 20 minutes (cut side up).
Heat a spoon of oil in a pan (add finely chopped onions if you like) add the crushed tomatoes and the tomato concentrate, let simmer for 5 minutes.
After 20 minutes, remove the aubergines from the oven.
This is where the kiddos can help out…Layer on the tomato mixture and mozzarella (plus the pesto if you feel like it)
Sprinkle on parmesan, breadcrumbs, salt and pepper.
Bake for 5 to 10 minutes.
Add basil for decoration and serve.
