I love peanut butter.
Peanut butter on toast.
Peanut butter mug cakes.
Peanut butter on banana.
Peanut butter straight from the jar.
Today I want to share the recipe for 3 ingredient, peanut butter cookies.
The Big Man’s World are brightening my days with their delicious ‘healthier option’ treats!
These quantities make about 20 peanut butter cookies.
3/4 cups of coconut flour (you can substitute this for other flour types or even for oats if you like. You may need to add more than 3/4 cups to get a good consistency though)
2 cups of peanut butter, you can use any nut butter you like though
1/2 cup of any sticky sweetener…agave syrup / maple syrup for example
Line a large tray or plate with baking paper.
In a microwave or on a low heat combine your peanut butter and syrup.
Remove from the heat.
Add the flour and mix until you have a nice, thick batter. If your batter is too thin, add more flour until you get a good consistency.
Use your hands and make small balls out of the batter.
Place on your tray and use the back of a fork to press them into a cookie shape.
Refrigerate until firm.
They are best served at room temperature.
Store in the fridge, they are also freezer friendly if you want to spread out the goodness.
