Today I am bringing to you the world’s most delicious banana bread recipe.
No really. It’s pretty darn special.
And super easy to make.
(disclaimer : this photo of banana bread comes from the site www.tasty.com it is not my own!)
What I like about this particular banana bread recipe is that it doesn’t call for anything fancy.
I usually have all of these ingredients already on hand in the cupboard. So if I’m a bit stuck for an activity or craving a sweet treat this is my go to.
To complete my dear friend Krystyn’s banana bread recipe, you will need the following ingredients.
½ a cup of butter softened to room temperature
¾ cups of white sugar
¼ cup of brown sugar
2 teaspoons of vanilla
3 ripe bananas mashed
2 cups of flour
1 teaspoon of baking soda
1 teaspoon of salt
Chocolate chips are optional but recommended as absolutely scrummy!
Preheat the oven to 170 degrees C.
Beat the butter and sugars together until smooth.
Add milk and beat again.
Add eggs one at a time and beat each time.
Add vanilla. Keep mixing!
Add the mashed banana and mix for a few seconds (do not overmix here!)
Stir the flour, baking soda and salt together in a bowl. Add these dry ingredients to the wet mixture and mix with a spoon by hand. Just enough for it all to be incorporated.
Add the chocolate here too!
Pour the batter into a greased and floured pan.
Bake for 45-55 minutes.
Check at 45 minutes by inserting a knife or toothpick into the loaf. It should come out (mostly) clean, a few crumbs are fine.
If it is wet with batter bake a little longer.
Leave to cool and voila, snack time sorted!
Top tip : Eat warm with a dollop of peanut butter. Mmmmmmmm.
